Salmorejo Verde
Heat sauté pan on medium heat and add 2 tablespoons olive oil. Sauté green tomatoes until slightly tender, 3 to 5 minutes. Season with ½ teaspoon of salt.
Add sautéed green tomatoes, garlic, bread cubes, vinegar, and honey to a blender. Pulse contents in a blender until consistency is nearly smooth. Set the blender to keep running while drizzling in ⅓ cup olive oil, and blend until glossy and smooth, about 1 to 2 minutes. Season with remaining salt and finish with fresh cracked black pepper.
