Ingredients


Makes 4

FOR THE SPRING ROLLS

  • 8 rice papers, 8-inch round 
  • 2 Jalapeño & Cheese Kvarøy Arctic Salmon Hot Dogs (or flavor of choice)
  • 1 Persian cucumber, julienned
  • 1 large carrot, julienned
  • ¼ cup mint leaves
  • ¼ cup cilantro leaves and tender stems
  • ½ cup microgreens or lettuce

FOR THE PEANUT SAUCE

  • ½ cup smooth peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1 garlic clove, finely grated or minced
  • ½ teaspoon finely grated ginger
  • 1 teaspoon sriracha 
  • ½ lime, juiced
  • 1 teaspoon sugar
  • ¼ cup water

Instructions

  • Pan fry or grill Kvarøy Arctic Salmon Hot Dogs according to package instructions, and cut in half crosswise and then lengthwise, so you are left with four long quarters. 
  • Fill a large bowl with warm water. Dip a spring roll wrapper in the water until just pliable, about 30 seconds. Place the wrapper on your work surface.
  • Working on the bottom third of the rice paper wrapper, arrange quartered Kvarøy Arctic Hot Dog, a few mint leaves, cilantro sprigs, a few pieces of carrot, cucumber, and a small handful of microgreens.  Fold the sides in, then roll up tightly. Continue with remaining ingredients.
  • To make the peanut sauce, mix peanut butter, soy sauce, fish sauce, garlic, ginger, sriracha, lime juice, sugar, and water together until smooth and well combined.
  • Serve spring rolls with peanut sauce for dipping.
