If you're picking up a fall farmers' market box from Specialty Produce, you're likely to find early seasonal citrus that are great for adding vibrant flavor to a fresh, healthy, delicious salad.

Ingredients for
Farm Box Salad
3 cups mixed lettuce, rinsed and chopped
1–2 carrots, cut into 1⁄4-inch coins
1 spring onion, sliced
3 tangerines, peeled and cut into 1⁄4-inch coins
2 tablespoons pomegranate seeds
Handful cilantro leaves, roughly chopped
1⁄4 cup extra-virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
1 teaspoon dried Italian herbs (optional)
Instructions for
Farm Box Salad
Combine all prepared fruits and vegetables in a large salad bowl. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, and dried herbs (if using).
When ready to serve, pour the olive oil and balsamic mixture over the salad and mix using salad servers. Taste and add more dressing if desired.
