A healthy salad to spotlight California's winter citrus

Nothing says winter in San Diego like this tropical salad recipe originally published in Kitchen Contentment by Liz Murphy.

Ingredients


DRESSING

  • 1 tablespoon rice vinegar
  • 1 tablespoon agave nectar
  • 2 tablespoons cilantro, finely chopped (plus more for garnish)
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 shallot, minced

SALAD

  • 1 avocado, cubed
  • 1 blood orange, segmented and diced
  • 1 cara cara orange, segmented and diced

Instructions

  • Mix dressing ingredients in a bowl or blender until combined.
  • Add avocado and citrus segments and toss until fully coated.
  • Garnish with extra cilantro and serve.
