Don't throw away that discolored avocado or the juice left in your feta container

This recipe from chef Keith Lord will turn your scraps into a luscious dressing.

‍

Ingredients

Makes ¾ Cup

  • 2 large bruised, overripe avocados, halved, seeded, and skinned
  • ¼ cup liquid from feta cheese
  • ½ teaspoon lemon juice
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon dried parsley
  • ¼ teaspoon dried dill
  • ¼ teaspoon dried chives
  • Pinch of sea salt
  • Fresh cracked black pepper to taste

Instructions

  • In a food processor or high-speed blender, combine avocado, feta liquid, lemon juice, garlic, parsley, dill, chives, and salt; pulse in short spurts until combined.
  • Season to taste with black pepper. Adjust consistency by adding more avocado to thicken the dressing or more feta liquid to thin it.
