Dragon Fruit and Camu Super Smoothie

Packed with the most abundant vitamin C–containing plant food, camu berry, this sweet and earthy smoothie is perfect for immune wellness

Ingredients


Serves 2

  • 1 cup frozen dragon fruit (pitaya) cubes or purée
  • 1 tablespoon fresh lemon juice
  • ½ cup peeled and chopped cucumber
  • ½ cup husked and chopped tomatillos
  • 4–5 fresh basil leaves
  • 1 teaspoon honey or maple syrup (to taste)
  • ½ teaspoon camu camu powder (optional superfood boost)
  • ¼ cup cold water (as needed, to adjust consistency)

Instructions

  • Blend dragon fruit and lemon juice on low until a slushy, almost-liquid-like texture is achieved.
  • Next, add the cucumber and blend for 30 seconds. Then, add the tomatillos before mixing again.
  • Add the remaining ingredients, blend on medium for about 10 seconds, then on high for another 10 seconds. Pour and serve.
