At Wild Tree Bee Company, that’s the entire focus.
We’re a small-batch producer rooted right here in Southern California, with hives spread across the region, working in step with the seasons and the natural diversity of the land. Our goal isn’t consistency. It’s to let each harvest speak for where it came from, and to tell the story of our bees.

That’s not how most honey is made.
Walk into a typical grocery store, and you’ll find honey that’s been blended across regions, filtered, and standardized, crafted to taste the same, regardless of origin—it just tastes like “honey.”
We take a different approach.
Our bees move through coastal blooms, inland wildflowers, and sun-soaked desert forage, gathering from what’s available in that place, at that exact moment. What they create isn’t uniform—it’s a season in motion, captured in a jar.
Near the coast, the honey is light and bright, with soft floral notes and a clean finish. Inland, it becomes warmer and more rounded, naturally sweet. Out in the desert, where bloom windows are short and intense, it turns darker, richer, and more concentrated, with a depth that lingers.
Nothing is added to create those differences.
They come directly from the landscape, the season, and the sun.
We harvest in small batches, taking only what the bees can spare, and bottle the honey exactly as it comes from the hive—raw, unfiltered, and never blended. Each batch is kept separate, so every jar remains tied to a specific place and moment in time.

We believe honey can be experienced the way people think about wine, where place matters, season matters, and variation isn’t a flaw, it’s the point. No two harvests are exactly alike, and that’s what makes them worth paying attention to.
San Diego County makes that possible in a way few places can. The distance between ocean air and desert heat is short, but the impact on flavor is profound.
