Honeydew Mint Sorbet

Ingredients for
Honeydew Mint Sorbet
- ¾ cup water
- 1 cup sugar
- 2 fresh mint sprigs
- 6 cups honeydew, cubed
- 1 lime, juiced
Instructions for
Honeydew Mint Sorbet
- In a small saucepan, heat water and sugar over medium until sugar is dissolved.
- Add 2 sprigs of mint and set aside to cool and infuse.
- Add honeydew to a food processor and blend until smooth.
- Remove the mint springs from the simple syrup and compost.
- Combine pureed honeydew, lime juice, and mint syrup in a shallow container and place in the freezer.
- Freeze for at least 6 hours or overnight.
- Shave and serve with fresh mint
