Creamy Cashew Jalapeño Dip
In a medium saucepan, boil cashews in water for 15 minutes or until doubled in size. Remove from heat and rinse.
Add all ingredients to a blender or food processor and blend until creamy and smooth. Add more salt, jalapeños, and lemon juice to taste.
Serve alongside crudités or tortilla chips. Provecho!

2 cups raw cashews
1 bunch cilantro, bottom stems removed
1–2 jalapeños, stems removed
3 cloves garlic, peeled
1 cup water
2 tablespoons freshly squeezed lemon juice
1 tablespoon kosher salt
