Strawberry Salsa

Take fresh strawberries on a savory excursion by making this fresh salsa to enjoy with chips, tacos, and more.

Ingredients


  • 1 lime, juiced + 1 teaspoon zest
  • 1 ½ teaspoons agave syrup
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 1 pint fresh strawberries, diced
  • 1 jalapeño, seeded and finely diced
  • ½ red onion, finely diced
  • ½ cup chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
  • Freshly ground black pepper, to taste

Instructions

  • In a large bowl, whisk together the lime juice, zest, agave, olive oil, and salt. Stir in the strawberries, jalapeño, onion, and fresh herbs.
  • Add pepper to taste and mix well. Adjust seasonings if needed (you might like a little more lime for acidity, agave for sweetness, or salt if it’s just not quite right yet).
  • Let the salsa mix sit for 20 to 30 minutes for flavors to combine and enjoy with chips.
