Take fresh strawberries on a savory excursion by making this fresh salsa to enjoy with chips, tacos, and more.
Ingredients
1 lime, juiced + 1 teaspoon zest
1 ½ teaspoons agave syrup
1 tablespoon olive oil
½ teaspoon salt
1 pint fresh strawberries, diced
1 jalapeño, seeded and finely diced
½ red onion, finely diced
½ cup chopped fresh cilantro
1 tablespoon chopped fresh mint
Freshly ground black pepper, to taste
Instructions
In a large bowl, whisk together the lime juice, zest, agave, olive oil, and salt. Stir in the strawberries, jalapeño, onion, and fresh herbs.
Add pepper to taste and mix well. Adjust seasonings if needed (you might like a little more lime for acidity, agave for sweetness, or salt if it’s just not quite right yet).
Let the salsa mix sit for 20 to 30 minutes for flavors to combine and enjoy with chips.
It wasn’t inevitable, but it sure is a good fit.
